        I only used salt. I salted it the night before, and put it in an aluminum pan in the refrigerator uncovered. That dries the skin somewhat, which makes the skin crisper when smoked. Then I sprayed them with Pam before they went on the smoker. These were 6 pound chickens, and were on the smoker for about 4 hours at 275 degrees. They were 170 degrees when they came up.

            No fan system. Just water in the water pan.
