    Propane After Taste?

    Does Meathead or Dr. Blonder have a definitive answer to "Does using propane to grill food leave any aftertaste in the food from the burning propane"?

    I dunno about the science, but I have a hunch it's like asparagus pee. I personally don't notice the taste difference with propane vs something else on a hot and fast cook, but I know a lot of people that do. Actually I know quite a few people that can taste if charcoal is the easy light stuff or lump, another thing I can't taste. But I can smell when I've ate asparagus and I know some folks can't when they have, so that's my reasoning

      Might want to make sure that your burners are working properly and at the proper rates... if they aren't getting the right oxygen:gas mix then it is possible... Kind of like using a torch to sear... if you don't have it dialed in right you can get an off taste.

          Something I've never noticed and I've BBQed on some real junk propane Q's thru the years.
          It is possible to become immune to propane taste after years of nothing but?
          Now that I'm frequently switching between propane and charcoal when I cook you would think it would be more apparent but to me its not.
          Can't speak to others palettes.

            Agree with Nate check your burners. They should have a nice blue flame with just a tip of yellow. If more yellow than just a small amount they are not burning clean and may be giving a propane smell or taste.

              The mercaptan myth. Because natural gas and propane are colorless and odorless a foul smelling compound called mercaptan is mixed in to alert people of dangerous leaks. We occasionally encounter the myth that cooking with gas imparts a foul taste and aroma due to the mercaptans. The AmazingRibs.com science advisor Prof. Greg Blonder calls this "A complete falsehood. When gas burns, the mercaptans turn into sulfur dioxide, which becomes sulfuric acid due to the water produced by combustion. The small amount of sulfur deposited on your food when burning gas is orders of magnitude less than naturally present in food, or added with garlic or onion powder in rubs, or found in the smoke from burning charcoal or wood. Natural gas is a very clean burning fuel."

              The AmazingRibs.com equipment reviewer Max Good says "No one turns their nose up at Grandma's holiday turkey and homemade pie because she cooked with gas. Likewise some of the best barbecue restaurants use gas burners as do many of the best steak houses. Clearly this is nonsense."
