    The menu for next week

    Monday - five racks of pork back ribs
    Tuesday - two whole chickens (butterfly) on the Weber kettle
    Wednesday - Pull pork for loaded potatoes
    Thursday - Chuck roast for Texas style chili
    Friday - Ribeyes

            DWCowles do you use a Vortex on those two butterflied chickens? Or how do you get two on there?

              Guy I have a Vortex but I won't be using it with this cook. I failed to mention that I will be trying Big Bob Gibson White BBQ sauce on one of the birds and Kiss of Fire BBQ sauce on the other. Here's how I'm planning on doing the birds...

              Looks like I will have to make a small change on this week's menu. Since I'm not going to be home until late Sunday night (tonight) Monday will be chicken and the ribs will be on Tuesday.

                I am only doing 2 fun dinners this week. Tuesday I am making an Italian vegetable stew. Wednesday I am doing a whole chicken either on the Weber kettle or in my mini WSM with a full chimney of lit coals and no water in the pan (I want to hit 325-335). I'll be halving 2 russettes, will lightly oil them and hit with salt and pepper. I'll place some sliced onions on the flesh side and will cook them in whichever outdoor cooker I am using. I am also going to roast brussels sprouts - If I spatchcock the chicken I can use the hover grill in my Performer and cook the brussels sprouts in the Performer. If I use the mini WSM I'll probably do the brussels sprouts in my gasser.

                We don't have any plans for Saturday night. I have some really good beef stock in the freezer. I might push to invite another family over and make french onion soup, smoked short ribs (it would be my first time) and some yet to be determined accompaniment.
