    Yeah, me too. lol

    So I wanted to show you what we used for one of our cookouts at the beach last summer. This was in St. Vincent & the Grenadines, on a black sand beach. This was a birthday party. It was fun! Man, had the BEST rum punch. It was the 4:3:2:1 recipe and maaaaaaaan. MAN. It was BOMB.

    Anyways, drool over THIS rig, fellas!

    I know it may not look like much, but this was some SERIOUSLY good stewed goat that day!

    Some of the best food in the world comes from rigs exactly like that one.
    Home made and functional.
    Most times it isn't the gear as much as the cook.

      I remember living in Sint Maarten and in St. Vincent, some of the best damn BBQ I've had came from a shady-looking little shack on the side of the road. Or just someone set up a grill at a wide spot, cooked up some big batches of stuff at home - rice and peas (like lentils), some potato salad and a stack of styrofoam take-out containers, then throwing in ribs, chicken or goat or lamb along with it. Amazing stuff, right there.

      I don't want to think about the sanitary conditions and what my local health department might say, but damn it was some good stuff!

              I think I have seen the ultimate in rustic throw back cookery. I was watching a cooking show Good Eats with Alton Brown. In the show Alton smoked Salmon in a cardboard box with 2 wood dowel rods to suspend the salmon, a hot plate with a cast iron skillet to hold what he called hard wood saw dust for the heat and the smoke, and a battery powered hand fan gizmo for convection/circulation. He cut a hole in the box to provide access to the heat plate and skillet. I was blown away by the simplicity, frugality, and ingenuity. I saw no reason why that should not work. Had I constructed it I may have burn it in a time or two though.

              Whatever gets the job done.
              For a year I smoked food on an old gasser that I tore the guts out and turned into a vertical smoker. It got the job done until I could afford somethin better. Food was still great despite the quality of the rig.

                I totally agree some of the best food comes off some of the fugliest rigs. But here in the civilized world where people are a bit more sophisticated they won't eat off of anything if they feel they need a tetnis shot first. And I can understand that too. If you've ever suffered food poisoning and I have you develop a tendency to look at food preperation with a wary eye.

                  When i grew up, dad and his brothers would put three 1" pipes in the ground and put a big jambalaya pot centered on them and cook with real wood underneath. We would do it on Saturday nights to listen to the LSU games. Now people use special stands and propane burners....
