    Weeknight pit activities

This evening I am doing an overnight cook for a couple of nurses who are leaving my department for a potluck tomorrow. I have it pretty well set on my Weber Performer that it will hold its temp all night with little to no supervision. Since I do have to work as well, I am refraining from my weekend past time while babysitting as surgery with a hangover doesn’t sound fun. For all of you out there who hobby-smoke, what is your favorite thing to do durin* a weeknight cook? I am sitting on my deck with an iced tea and watching the stars come out as the smoke not only smells great, but it keeps the bugs away as well!

Sounds relaxing! Your post is right up my alley. i work nights (in a hospital too) and on those occasions where I have a night or two off between stretches I will often do a night smoke. My favorite thing to do, if it's warm weather, is sit out on the deck listening to the crickets and the meat sizzling and wood popping and maybe play guitar. Usually here though the bugs (mosquitoes) eventually get to me and I end up sitting in behind the screen door. I LOVE these occasions to sip a beer or some whiskey/Scotch and have peace & quiet. Smoking during the day is always accompanied with mowing the grass, fixing something, kids running amok, etc etc. Night smokes, although rare for me, are what it's all about.

Iced tea and watching the stars sounds great to me! I do a good number of week day/night cooks, and you cannot be sitting there with a beer in your hand all evening on a work night. I say that with several beers on tap too!

Some of my favorite memories of competition cooking is the 2 or 3 AM conversations while feeding the stick burner
With the advent of Hot and Fast cooking very few folks are up at that time these days

when catering a lunch I get up early load the pit and then take a nap
Thats why I really prefer catering dinner,
the time line is so much easier on me

If you have a Weber Kettle, you need the Slow 'N' Sear

                slow n sear
The Slow 'N' Sear turns your grill into a first class smoker and also creates an extremely hot sear zone you can use to create steakhouse steaks.

The Good-One Is A Superb Grill And A Superb Smoker All In One

                the good one grill
The Good-One Open Range is dramatically different from a traditional offset smoker. By placing the heat source behind and under the smokebox instead of off to the side, Open Range produces even temperature from left to right, something almost impossible to achieve with a standard barrel shaped offset.

Griddle And Deep Fryer In One

                Pit Barrel Cooker Smoker
The flat top does the burgers and the fryer does the fries. Use the griddle for bacon, eggs, and home fries. Or pancakes, fajitas, grilled cheese, you name it. Why stink up the house deep frying and spatter all over? Do your fried chicken and calamari outside. Blackstone's Rangetop Combo With Deep Fryer does it all!
