Well after following the forums and scanning this site for about a year, I pulled off the first ‘other’ cook. By ‘other’ I mean not what I grew up knowing as BBQ ie. burgers, dogs, steaks, etc. Last summer I purchased a built in Napoleon NG BBQ, a Thermoworks Smoke thermometer and an Amazen tube smoker with ideas of trying all the amazing things I see here.
The first attempt was this weekend. I prepped a pair of Costco Pork Ternderloin with a rub and wrapped them in Apple wood smoked thick cut bacon. Half filled the smoke tube with competition blend pellets and used a 2 zone setup @250 monitored by my Smoke thermometer and removed when the pork hit 140. Judging by my families’ response, it was a winner! Next time I would run the temp at 300 to crisp up the bacon a bit more.
