    I was at central market looking for Christmas menu inspiration. My family has demanded that I cook the same thanksgiving turkey. I was looking for another alternative until I ran into this......



    Free range, none brined bird. I guess turkey it is....

    Nice. One of the things I like about being near Amish country is that during the season we can get truly fresh, unbrined turkeys at the Farmers' Market, but they're $.80 more per pound then you paid.

      I'm suspecting human error because the rest were $4.99. Plus the sell by date was a sign....... MY BIRTHDAY!!!

        Has anybody tried tying back a cooked spatchcocked turkey like Dr. Blonder said he does in the first seminar?
        I remember him saying something like he spatchcocks it then ties it back for presentation.

          I have this last thanksgiving and it turned out fantastic! Juicy and tender. I'll never cook turkey any other way now.

        Good price, I picked up a couple Butterballs for .99 a pound. I did mine on the PBC and put the hooks fairly close together and the thing tightened up back to it's original shape, you wouldn't have been able to tell it was spatchcocked.
        The second one I put the hooks further out and it didn't do that.

          John, did you truce it back or just fold it back to original shape? My kids just love looking at a big cooked bird

            Butcher string would work or a few toothpicks in the right places.
