Ok, so I could not wait. I am weak. I put the salted NY steak in the bath before I read the "Sticky" on the "Purge." So Potkettleblack I'm gonna make some mushrooms reduced with red wine cut it with the salty purge and toss in some Demi I have in the freezer. I'm hoping that works.

If you reduce the purge, be very careful with salt. I'd do the mushrooms, then deglaze with red wine, reduce, add filtered purge, and then mount with unsalted butter.

Potkettleblack that what I did. The wine reduced and earthy mushrooms helped cut that salty purge. The no other season except fresh crack black pepper. It was awesome. BTW That SV Sticky thread is awesome. I'm living my device. Gracias.

I'm loving using BBQ to make friends and build connections.
I have #theRibList where I keep a list of new and old friends and whenever I'm cooking, I make 1 to 20 extra and share the joy.

We have gone about 380 days without (2) any break. I did not hesitate to give my wife her freedom to Virginia to see her life long girlfriend. She deserves it. The kids are in Tahoe and need it too. I took the short stack (cash) and am making the best of it. My staycation budget for the week $104.00. I have about $65.00 left and I'm on day one. Reminds me of Mexico back in the day. . But that needs to include booze..
I appreciate having a place to share a $104.00 staycation with people who give a darn about how I cooked my dinner. Awesome! Just freeking awesome!!
