    The Night Before Thanksgiving

Twas the night before Thanksgiving and in my sleep.
Strange dreams in my mind, began to creep

Thanksgiving leftovers beckoned --- The dark meat and white,
But I fought the temptation with all of my might.

    Tossing and turning with anticipation......
The thought of a snack became infatuation.....

So to the kitchen I did race, Flung open the door,
And gazed at the fridge full of goodies galore
I gobbled up turkey and buttered potatoes,
Pickles and carrots, beans and tomatoes.

I felt myself swelling so plump and so round,
Till all of a sudden, I rose off the ground!

I crashed through the ceiling. Floating into the sky....
With a mouthful l of pudding and a handful of pie,
But I managed to yell as I soared past the trees.

    HAPPY EATING TO ALL!
    PASS THE CRANBERRIES PLEASE!

Just spatchcocked the turkey....it already has plenty sodium. The 2 pound baby back ribs needed some Kosher salt.

My farm fresh turkey is resting in the refrigerator waiting for its early morning debut on the smoker.

My spatchcocked turkeys await their final purpose in the fridge... all seasoned and brined and ready to go... I do not need to start cooking until 11AM... that should give me plenty of time for ABTs and finishing the gravy!

Going to the mother in laws tomorrow... I hope there is a lot of gravy so I can swallow the turkey. Never fear though, we did buy some turkeys that are on sale this time of year. Anytime is a good time to grill a good turkey!
Happy Thanksgiving everyone! Make sure to eat dessert! Even if you don't have room... Life is uncertain, eat dessert first!

My daughter's bird is covered in duck fat and herbs. I skipped the dry brine as it was already "slightly" seasoned by the farm folks. Not sure what slightly seasoned with salt is so I opted to play it safe

Funny. But one question- if it's the night before Tgiving, where are all the turkey leftovers coming from?
