    • We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).

    A celebration of life

    Many of us remember Steve Markley, aka smarkley , one of our charter members so fondly.

    Steve died 5/23/16.

    Steve turned me on to Buffalo Trace, a fave of his.

    In his memory I shall lift a shot of Buffalo Trace in his honor next Tuesday night, 5/23. For reasons unknown, I'll be toasting at 9pm.

    Anyone wishing to do the same, well, give the ole boy a shout out.

    He was a great man and a valued member to The Pit. Always in great spirits, full of wit and ALWAYS willing help. Steve was one of the guys that really helped me up my game, when I first joined The Pit.
    In addition the BBQ, Steve was also a driving force for me to look into Cast iron cooking. My obsession with everything Cast Iron, is the result of his passion in the art. I really enjoyed our conversations about cast iron here .
    He was also one of The Pit's first KBQ owners as well. You can look at his conversations with everyone at about page 5 of the KBQ Has Landed Thread. I frequently refer back to those posts for a laugh or just to reminisce.

    Thanks for posting Rich! May Smarkley's memory live on in The Pit forever!

                Didn't know that about ER, Huskee !! THANK YOU!!

                ER is easy to get in my neck of the woods. Buffalo Trace, VERY difficult. My liquor store only gets a few bottles in now and then, and they hide it under the cash register. You have to know to ask for it.

                They told me it is rationed in these parts. GEESH

                I'm happy to have such company on the 23rd! Hopefully, it'll bring a smile to his face!

                  ER comes in a clear straight shouldered wine bottle shaped bottle, with white script lettering. In my area it costs $4 more than BT ($31 compared to $27 for BT), which is still ridiculously cheap for such good bourbon IMO.

                  • Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

                      The Good-One Open Range is a charcoal grill with an offset smoke chamber attached. It is dramatically different from a traditional offset smoker. The grill sits low in front and doubles as a firebox for the smoke chamber which is spliced on above and behind so it can work like a horizontal offset smoker only better. By placing the heat source behind and under the smokebox instead of off to the side, Open Range produces even temperature from left to right, something almost impossible to achieve with a standard barrel shaped offset.
