yeah, they're Macarons. as opposed to a macaroon, which is the pile of shredded coconut, flour & sweetened condensed milk, a macaron is a meringue candy in the shape of a cookie (No flour involved) filled with various & sundry 'stuff'.
you don't have to flavor the shells but you can with a few drops of candy flavor oil or essential oil. chocolate is easy cause you put a couple of tablespoons of cocoa in the dries.
line two baking trays with parchment paper. with a pencil and something to trace, draw circles on the parshment paper. I use a milk jug lid.
but, 4 egg whites,
1/4 tsp cream of tartar
1/2 cup granulated sugar whipped to stiff peaks
LOTS of whatever food coloring you choose. they are traditionally very heavily colored. the red required half a tube of red gel food coloring.
2 cups powdered sugar
1/3 cup finely ground almond flour
run the dry through a mesh sieve with a whisk to sift and fluff it
when you have a stiff meringue, put the meringue & dries together and fold together with a spatula until the mixture is wet and flows off the spatula like lava
heat oven to 400
put your batter in a couple of piping bags. cut the tip so that the opening is about 1/4"-1/3"
turn the paper over so that the circles are on the back side but can be seen through the paper. pipe the batter onto the circles.
Bang the tray, several times on the stove or countertop to force any air bubbles to rise and break the surface.
now, let the batter sit, undisturbed for 20 minutes to let the surface of the disks dry and harden.
after resting, put one tray in the center of the oven. immediately drop the oven temp to 300
bake for 12 minutes. the bottom should be just golden. let cool. rehat the oven and bake the second tray.
fill with appropriate fillings. anything from jam to ganache to nutella or peanut butter to cream cheese fillings, whatever you like.
