    Brisket this weekend, bad weather.

    My daughter will be home from Chile for a month, and since we didn't do a brisket last year because of MJ's illness (she's doing great, so far), I promised her we would do one this year. And as the holidays fall, the only day we can do it is this Saturday. And we are supposed to get 5" of snow, changing to ice and freezing rain!

    I'm not worried about the cook; the BGE will take care of itself. But man, it is going to be a real PITA going out and building the fire, setting up the DigiQ, and going out to check on it as it nears doneness.

    Damn, I am tempted to do this one Jewish style, in the oven. But I don't have a vessel large enough for this 18lb monster!

      Noted from prior experience- let the freezing rain fall on snow, don't be in a hurry to clear the snow from the walk, deck, or driveway. Freezing rain just LOVES to make a nice clear glaze on said surfaces when they've been cleared and are smooth. A bruised tailbone taught me that lesson more than once. I've finally learned.

        fzxdoc OUCH! I don't remember that story. Sorry to hear that. I get obsessive sometimes about clearing ALL snow as soon as it stops. Maybe not everyone else is that way, but I have to tell myself to chill and let the freezing rain fall on the snow at least then I can still walk on it!

        Put down some canvas over the snow and lay on some sand. don't be shy, use a cane or a strong stick with a nail ot screw on the bottom end to grab. don't chance a fall

      I don't get the snow or the freezing rain where I live so I shouldn't comment. In my opinion, braving the elements may make it more special. I have done the opposite for the kids. It's 110 outside and I swear I feel like I'm going to pass out from the heat. My kids are back from where-ever and they want ribs for them and their friends. By the time I'm done I don't even feel like eating but the enjoyment on their face makes it all worth it. It's nice you are getting the visit and all is well on the health front! My boy can't get home until after Christmas because he is "forced" to do Marine Biology field work in the Caribbean. I wish I had his bad luck!

      Have you considered smoking it early and then a sous vide on Sat? Maybe a little bark restoration under the broiler too.

                  I am cooking 2 briskets this weekend: one for friends and family and the other one that I'll vacuum pack/freeze for deer camp next weekend.
                  This weekend forecast says it may be in the 20's & windy. Brrr

                    Well it looks like the warm air will be arriving sooner than later, now Saturday is snow changing to rain, and rain Saturday night into Sunday.

                    It's not like 40* rain is a picnic, but it's a damn sight better than snow and ice.

                      Rain is GREAT for BBQ!!! It sounds like you might be able to run a bit hotter and cleaner fire also. A bit more work maybe, but what sweet work it is...

                      I've been asking about that Jewish brisket recipe for over a year now, so this is what I've decided to do.

                      I don't have a vessel large enough to hold a whole packer brisket, even trimmed. But I do have one large enough for the point.

                      So, I'm going to smoke the flat overnight, and I'm going to do the point Jewish style, in a Dutch oven.

                        Same boat here in southwest Ohio. Brisket trimmed and brining, weather inbound. Dr. Blonder's sous vide technique for the win...

                        UPDATE: Left work at lunch and fired up the KBQ to get the brisket smoked. It's now chilled, sealed, and waiting for the hot tub on Sunday while it snows.

                        I already have 2 chuck roasts water-cooked, and in the refrigerator as well. Sunday I will do 3 racks of ribs, give the chuckies some smoke, and firm up the bark on the brisket. Should be a good party, despite all the snow and rain.
