      Well, my birthday is Christmas Day, but after 70 trips around the sun, I'm OK with focusing on family and grandchildren on Christmas. So the day before, I decided to experiment with crispy pork belly with parsley sauce cooked on the rescue kettle. This is the Danish National Dish and is known there as Stegt flæsk med persillesovs. It starts with sliced pork belly on the indirect side until crisp:
