      AMAZING RIBS GLOBETROTTING PITMASTER CLUB BIRTHDAY HAT #1 TRAVELS TO CAYE CAULKER, BELIZE!!!

      OK, so when I signed up for the Birthday Hat Club, I was living in Bridgeport, CT, happily grilling with my 28" Weber Kettle & smoking up good stuff on my Landmann side-box charcoal smoker and occasionally my older (cheaper) Brinkman side-box charcoal smoker. Somewhere in between then and October 29, 2017 (my birthday), we sold our house and all our belongings, including the Weber and Landmann smoker (the Brinkman had seen it's better days and went to the dump :-( ), packed up our warm weather clothes, put our winter clothes in storage and moved/retired to Caye Caulker, Belize. Caye Caulker is a small (5.5 miles long, population 1,400) island located 25 miles off the coast of Belize, in the Caribbean Ocean...basically, PARADISE! We are less than a mile from the MesoAmerican Coral Reef, the 2nd largest coral reef in the world, after the Great Barrier Reef in Australia.

      I wasn't sure I would still be included in the circuit, since we are so remote and Belize is a 3rd world country with a less sophisticated mail system than the US. Fortunately for me, T-bone was the guy to send me Hat #1, and he graciously opened his checkbook to cover the almost $43 it cost to send the hat to this remote island....THANK YOU again T-bone !!! So here is the saga of The Globetrotting Pitmaster Birthday Club Hat #1's adventure in Paradise:

      The package with Hat # 1, plus a bag of T-bone's Secret BBQ Rub ( new tradition started by T-Bone) arrived on Friday, October 27, so I wanted to make T-bone knew his efforts paid off:

      So, for my BIG Day, the celebration of my 62nd Birthday I had some special plans and of course Birthday Hat #1 was the Guest of Honor along the way.

      My wonderful partner Lorrie (BTW, this whole "retire to a Caribbean Island" thing is her Dream, I just get to live it with her!) decided I should not have to cook on my Birthday, so we took Birthday Hat #1 out for dinner at the new French Restaurant on Caye Caulker....yes, a REAL French Restaurant with a REAL French Chef, Cook and Server on Caye Caulker...who'd a thunk it possible??!!??)...of course we ate outside, with the Caribbean Ocean in view:

      So that was my Birthday, however, I understand the whole premise of this Club is to do, and show, some BBQ/Smoking skill (other than a Rocky Patel Vintage 1999 Torpedo, of course). Well, meat selection on this remote island is somewhat limited, especially beef, but I must admit, the chicken here is out of this world...local raised (on the mainland), organic, no hormones, antibiotics or anything else...all natural. So Birthday Hat #1 and I decided to indirect cook a whole chicken, using some of T-bone's Secret BBQ Rub (let me just tell you all, I feel sorry you weren't the ones receiving Birthday Hat #1 one from T-bone and the benefactor of his new tradition....damn good stuff!!!).

      So, we prepped the chicken:

      We also roasted some fresh local cauliflower in tin foil and Lorrie made up a cucumber, tomato & onion w/ olive oil & balsamic vinegar salad. We waited an hour or so and this was the finished product:

      Let me tell you folks, Birthday Hat #1 Dun good, he Dun Real GOOD for us. The meal was delicious and we had a wonderful time celebrating with Birthday Hat #1, and apparently so did Birthday Hat #1, as you can tell, by the end of our celebration, everyone was pretty wiped out:

        WOW, small world, we lived in Blackrock, just down the street from Bullard Square (now a BJ's)!!!

        Put your fears aside, do your research and go for it. We've been here a month and have no regrets, and we're in rainy season, so it's just gonna get better & better.
