    KOS 2016 and a wonderful BBQ weekend!! Part II

    I did a little write of my experience at King of the Smoker 2016 in the Competition section of the pit. As lucky as I was to try the best BBQ in the nation (and arguably the world), it wasn't even close to my favorite experience on my BBQ journey thus far.

    KOS was this Saturday. The public was let in at 1 p.m., but a friend of mine is a Master Judge and was lucky enough to get picked to gudge KOS and I was lucky enough to get to volunteer with KCBS and eat some great food. After turn ins, we spent a few hours rubbing elbows with the gods of competition BBQ and headed back home (I live about an hour and a half away from Palm Springs area where KOS was).

    I was home at around 6:00 PM to embark on Part II of the best BBQ weekend of journey to date. A good friend of mine (the same one that got me into the judge's tent to volunteer) also has a trailer BBQ pit that I borrowed to help out the California BBQ association who volunteered to cook a TON (literally more) of BBQ at the 24th Annual Veterans Holiday Celebration at the West Los Angeles VA facility. I attached some pictures of the pit- it's very cool! It was a police radar trailer (you know, the ones that say "Your Speed" on them) that I always try to speed up and max out when I see them that was converted to an insulated smoker with 42sqft cooking space.

    The CBBQA has been volunteering for about 5 years with the VHC. A great group of guys with pits of all shapes and sizes turn up to cook a ton of great food for veterans, a large portion of which are disabled or homeless. Most of the pits are competition trailers or for catering, but we also had about 10 WSMs/Kettles.

    I arrived about 9pm after about 1,200 lbs (80+) of briskets had already been trimmed loaded up for an overnight cook. We had a potluck and shared a few stories over a camp fire and a few adult beverages. The mayhem really started at 5AM the next morning. I fired up the pit to 325 to start cranking out half turkeys and turkey drumsticks on the smoker. I easily cooked 300lbs+ of meat, and the whole CBBQA group cooked over 3000 lbs of meat! 1,200 briskets, 500lbs drumsticks, 170 half turkeys, 500lbs tri tip and close to 1,000 lbs. chicken.

    Cooking that amount of protein on the cooker I was using is more than a 1 man job, but the 20+ CBBQA pitmasters/volunteers worked their tails off to get everything cooked! The team next to me was super helpful and overall it was nice to see competition bbq guys getting together to help everyone out. Generally when you think of competition BBQ you think of the opposite, but the day was full of hard work, a ton of thanks from each other and lots of people helping each other out. All of the board members of the VA facility made a huge point of coming by to give thanks, and Le Courdon Bleu sent about 50 culinary students to work in the kitchen to help trim meats, cook sides etc. About 90% of the protein was cooked by us.

    The most rewarding part of it all was to go into the tent and literally see thousands of veterans and their families eating the food we helped to prepare. For many of them, this is their best meal of the year and they don't have anyone to spend the holidays with. I got a tour of the tent from one of the head Chef's and I was speechless and had a huge gulp in my throat (maybe even a tear or two) when so many of America's heroes that have sacrificed so much were sitting there enjoying a meal and telling ME thank you, like I deserved thanks for spending a day preparing a meal for them. So very humbling and heart warming. I think the total head count was around 5,000-6,000, and we got nothing but great reviews from everyone. This will be an annual event for me every year and I definitely will be asking for help if anyone from SoCal (or anyone else) is interested. Here's looking at you guys Breadhead eugenek SoCalTim etc. Hands down the coolest BBQ experience of my life. The pictures in the tent was just a fraction of the people we fed.

    This is not just about BBQ- there are thousands of volunteers and sponsors that work so hard and give so much to our veterans.
    With the holiday season in full force, I encourage you all to get out there and cook or spend time to help the less fortunate. I promise, you will get back way more than you give!
