    Keeping meat fresh and moist.

    When smoking a couple briskets or boston butts whats the best way to keep them warm or rewarm without drying them out? I try to time it just right but that dosen't always work so well.

    Keep em wrapped tight in a faux cambro and when the IT drops below 150, place it in a oven to bring neck up to 180 IT. Or keep in an oven at 170 for a few hrs.
