      Oh, the joys of a pellet smoker and a wireless thermometer rig. I have four boston butts on but I was sleeping away....the wind has the smell in my house but nothing to worry about on temperatures....

          Huskee, I got up at 2 am to get the Lang fire up and it was like in the low 30's outside so I had to get two fires going (one for me and one for the brisket). I put the brisket in around 3 am. Hopefully the brisket will be ready to wrap around 8 or 9 so I can get the ribs on. I trying to plan it so the ribs and the brisket will be ready around the same time. Plus the grandkids wants some Pig Candy.

          Wow, KY is as cold as MI. Now I don't feel so bad. It's a labor of love though. I'll be doing that Sat the 18th... brisket time for me.

        Alas, I was sound asleep with nothing on the grill.

        My Mak 2 Star, though, will cook all night long without any help on my part, so on nights I'm cooking big hunks of meat I am still sleeping soundly.

            DW, that's ok you can still share and put the link to it up. This is my favorite cooking site but I still cruise some others and learn what I can. Most of the serious learning and techniques are here. I am always amazed at the other sites and there lack of knowledge on why they do something. I guess that is why Meathead named it "AmazingRibs.com"

            I got the rub recipe from www.smoking-meat.com. He charges a small fee for the rub and bbq sauce recipe to support his website. I have been using the recipes around 4-5 years or longer. The bbq sauce is ready good.

          I was trying to sleep fast as I was behind the curve getting ready for company today and 27 other projects that need to get done. I leave for a race on the 15th and don't have any airplanes ready to fly.
