    Forgive me for I have sinned

    Forgive for I have sinned. It has been two weeks since I last grilled. Did to bachelor party and injuring my foot riding a quad, a family vacation to Disneyland, and a wedding I have forsaken myself. Now things are back to normal. First cook tonight pork chops and then chicken thighs tomorrow, and so on from there.

I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

        OK, when you go to Confession you need to first join with a fictitious name and not attach a photo. However, I do not view this as a sin. While you attended a bachelor party and said your foot was injured in a quad ride (I believe the party story but not the way you were injured), I see you repented by attending to the family at Disneyland. So you have turned to ashes to atone. Wise choice. Make sure you have something marinated in wine.

            I think I can handle that. The sweet smell of smoke on the air should do the trick. Here is a sample I did pork chops last night with blues hog dry rub. I looked the rub because of the lack of salt and different flavors.
