    Worried About Double Salting Pork Butt

    Ok, the pork butt I am going to smoke tomorrow doesn't say that it is flavored or injected but I do see that it has a sodium content of 3% recommended daily consumption. I believe it was 7mg/4oz serving. Do I still salt the pork butt or not? So far I am leaning to not since I am unsure.

    I would cut back on the salt in the rub. Did the label say that it was in a sodium solution? WHen I get pork sometimes under the moist and tender label at Kroger that is what it says.

      Cut a small piece, microwave it and taste before salting.

        I agree with Ernest. That actually seems like a fairly low amount of salt, perhaps even a naturally occurring amount. I think you need to dry brine.

            Ernest nailed it. I tossed a small piece in a pan on the stove. A couple minutes later the verdict was in. Unadultered pork butt. It has been trimmed, tied, and salted. It goes on the smoker in the morning.
