You use a heated cast iron skillet to cook the top side of quesadillas?

Genius! I used to flip. Then I had the great idea that I would stick mine under the broiler, which works but takes longer. I like your way better. Thanks Ernest.

The top curls when under the broiler. The heated top skillet puts weight on the whole mess so it stays flat.

I'd have to say my favorite kitchen gadgets are my Maverick 732s (I use 'em for many things including indoor oven cooks like meatloaf, etc).
And next is my Houdini Wine bottle opener (red), these things are great.
Then my marble wire cheese slicer

I use my Benriner Mandoline to slice cheese. I need to look into that cheese slicer.

where can I get one of those cheese slicers? I usually always buy my cheese in 500 to 900 gram bars, and that would be a good investment for me.

Go to our Amazon link http://tinyurl.com/amazingribs and search for "RSVP marble cheese slicer". It comes in white or green marble, includes extra wire cutter. $14

Thanks for the info Huskee, Will use that link. I have one of the rabbit ear wine openers and it works great, but a friend of mine gave me a rechargeable wine bottle opener, and it's fantastic. It's the Waring Pro Wine Opener. Battery pack and rechargeable base were included. I love the thing.
