    What have I done? And what will I do?

    One of the local supermarket chains is running a special this week -- whole pork loin 99 cents/lb. I bought 23 lbs of pork loin. Now, it's only me and the Mrs. here so that's a lot of pork. At least half of it's going to sausages, and I guess I'll wrap up the other half for now and squeeze it into the freezer. If I can make a big enough hole in my nearly full freezer I'll buy another 20 lbs. I just can't resist cheap!

      • We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).

I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

              Loin is awful lean for sausage. Add a bunch of pork belly or pork fat to the lean meat.

                Not to worry. Some of what fills up the freezer is pork fat and fatty bacon. Both good for sausages. I don't over do, though. Fat is flavor, but good sausage and good chili don't need to be swiming in grease to be good.

                  meh, proper sausages require a certain amount of fat. of course, it also depends on what KIND of sausage you are making.

                I'm afraid the Mrs. would rebel. I've got a freezer and and side by side now. Plus the fridge in the kitchen. I don't know where I'd put another. I inherited the side by side when she wanted a new one in the Kitchen. Put it out in the utiliity closet off of the patio. Fridge side houses beer and meat being queued for the smoker, grill, grinder, or freezer.

                  That's a great price. It is just my wife and me, so I understand your situation. When I buy a whole loin I usually cut some into loin chops and freeze some small loin roasts to butterfly and roll stuffed with dried fruit and nuts.

                    And some of what fills the freezer now is pork chops, pork tenderloins, and pork roast. I see lots of pork dinners in our future. I hadn't tried stuffing a pork roll with fruit or nuts. We might like that. Have you tried dates and walnuts?
