    Bacon from scratch

    Did the Bacon from scratch recipe using MH's technique / recipe.

    This was my second attempt. The first try was good but the wife said it was too sweet. I switched to hickory this time instead of apple and hit a home run. The wife loved it. I cook it on the stove in a cast iron pan to get the extra extra crispy profile I like. For her, I cooked it in the microwave. You can see in the pics the way higher ratio of meat to fat, unlike the mass produced stuff. I don't smell well at all but I got a whiff of freshly cooked bacon and almost swooned...lol. I took pics of the pork on the grill but apparently the SD card wasn't inserted. I smoked it for about 90 min. using a 4 oz. chunk of hickory on my Weber with the Smokenator and Party Q. Put in fridge and the wife took it to work the next day to slice.

      Some dang good looking bacon! My first batch I didn't trim enough fat off the top so all the goodness came right off. My wife likes very crispy bacon and I couldn't get mine to get very crispy. Plan on trying again before too long.

        I didn't trim it at all. Just had the butcher take the skin off and cut into 2 pieces (2 lbs. each).

        Was a LOT easier than I thought it would be. Just follow MH's recipe / technique and you can't go wrong

      I had bacon with scrambled eggs for breakfast, a bacon egg & cheese biscuit for lunch and a bacon cheeseburger for dinner...lol
