I'm grilling deer back strap with bacon wrapped around it.

Ain't doing ribs. They don't do well for me on holidays.

Jerod Broussard Ever try butterflying that backstrap and stuffing it with shrimp and lemon butter sauce then rolling it back up and wrapping in bacon? Heavenly.

No, we pretty much do it that way or fried. Not enough medium-rare eaters. I got backstrap off two other deer still in the freezer. Thanks, may have to check this out with one.

Ham/Pork Meatballs with sauce. Meatballs are already smoked last week and waiting in the freezer. Sunday morning they go in the crock pot with sauce. Happy Easter to all who celebrate.

Wild Sockeye salmon lightly smoked with Alder wood. Grilled asparagus ala Meathead, potato salad. A small ham on the side for the non-salmon eaters.

Mrs Mosca comes home from chemo the day before. She's not usually up for much. She might have yogurt and a can of soup, or peanut butter on celery.

I'm doing Alton Brown's City Ham. I've done it every Christmas and Easter for the last three years and it's always a huge hit. My family raved about it so much that my in-laws no request me to make it for their dinner too.

Have you tried doing the first part (250 degrees) in a smoker?

I'm smoking 24lbs of pork butts to be served with cole slaw,

I'd like a second side to serve with it.
            Any recommendations?

Whiskey baked beans. A couple hours of smoking under the butts, picking up that rendered fat.....just got hungry.
