    SAVE THOSE BONES!

    I hope all of you are saving all your beef and chicken bones from all your cook-outs for making wonderful homemade beef and chicken broth/stock. Homemade broth is a nutrient rich super food. (There was a reason your mom fed you chicken soup when you were sick). And the taste is wonderful. After you finish chowing down on that beautiful grilled chicken, toss the carcass in a freezer bag and when you accumulate enough bones (use wings, legs etc, too) throw in crockpot or stockpot and make broth.

    Do the same with beef bones adding some knuckle and marrow bones so it gels. These can be purchased at nearly every meat department for less than a dollar a pound or given away free at some butcher shops.
    After the broth cools and the fat has risen to the top, remove the fat, put in freezer bags and use to stir-fry vegetables, cook rice etc, etc. Melt a bit of the beef fat and brush on steaks before grilling. "Beef love". Quicker and easier than melting down fat trimmed from steaks.

    Making both is super easy, sooooo good for you and has many uses.

    I wholeheartedly agree, ontheranch. In fact tonight I'm making some smoked chicken tortilla soup with some smoked boneless chicken thighs and a broth made from the the two chickens from my next-to-last cook in my Pit Barrel Cooker. I make the broth and freeze it flat in 8 cup allotments in gallon-size freezer bags.

    To help with the cleanup, I tie all the chicken bones, pieces and parts into a large piece of cheesecloth. Then I add onions, carrots, garlic, basil, tomato paste and celery chunks to the mix and let it simmer away for a few hours. I use organic chicken broth instead of water (or half and half with water) to make the flavor even richer. I don't add salt or pepper because the broth and the rub from chicken parts will provide enough, usually.

    When it's all done, I cool the broth completely in the fridge. Then I skim off any fat and lift out the cheesecloth bundle to get the chicken parts out. Next I strain the rest of the liquid into the plastic bags which I poke into a two-quart plastic pitcher to keep them standing straight up.

    Once the air is forced out and the bags sealed, that yummy broth is put into the freezer on a cookie sheet with a layer of paper towel in between each bag, just so they don't stick together from the condensation. When totally frozen, I stand them up on end like little soldiers waiting for their assignment.

    I love using that broth in my soups and other recipes that call for chicken broth.

    Ditto for beef bones.

    Here's how I make 2 quarts of Chicken Broth:

    1 chicken carcass, including skin and all leftover bits, tied up in two layers of food-grade cheesecloth
    1 quart organic low sodium chicken broth plus 1 quart water or 2 quarts organic low sodium chicken broth
    1 cup dry white wine
    4 large garlic cloves, smashed
    4 whole cloves
    2 Tbl tomato paste
    1 tsp dried basil
    2 medium onions, peeled and quartered
    1 celery stalk, cut into 2 inch pieces
    1 carrot, cut into 1 inch pieces

    Combine all ingredients in a large pot and bring to a simmer.
    Allow to simmer, covered, for 4-6 hours. Don't let the broth boil or it will turn cloudy. (It will taste fine even if it is cloudy, though.)
    Take pot off burner and allow to sit at room temperature for no longer than 1 hour.
    Put pot in refrigerator (on a hot pad just to be safe) and allow to sit overnight.
    Skim fat off the cold broth.
    With a meat fork, hook the cheesecloth bag, allow it to drip over the pot and then set it in a strainer placed over a bowl to finish dripping.
    In the meanwhile, strain the broth into a large measuring cup (I use an 8-cup measuring cup). Discard the stuff in the strainer.
    Add the broth that has dripped off the chicken-filled cheesecloth to the rest of the broth and discard the chicken.
    Place a 1 gallon plastic bag into a 2 quart pitcher. I use a narrow plastic pitcher.
    Pour the broth (a little more than 8 cups) into the bag.
    Squish the bag to force out all of the air and seal tightly.
    Lay flat on a rimmed cookie sheet and place in freezer until frozen solid. Then remove the cookie sheet and store the flat bag of broth in the freezer for up to 6 months.
