    All night cook!!

    Going to watch the Ole Miss vs LSU game tomorrow at a friends house. It's in LA so, I will surely be out numbered. I will try to win the crowd over with some good pulled pork.

    Got 2- 8lb butts. Put them on the smoke at 21:00. I will check on them periodically through the night. Should be at temp of 203* by 09:00, cooking them at 225-260* I will pack them up in the faux cambro and head on over. Probably pull them around noon.

    • We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).

      Almost there! One shows 203* the other shows 202* once they both are at 203* I will spot check them with the Thermapen.

            • Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

              Thanks DWCowles hopefully in a few more months I will be picking your brain about that Lang. I've been cooking on my kettle and drum smoker for a few years now, it's time to upgrade. 36" Lang is on my short list.

                  Wow - those did get done quick. Lately my 8-9 lb shoulders have been taking upwards of 16 hours to get done unless I crutch them. I usually put mine on at 23:00 or so and they are coming off around 15:00 the next day, then into the faux for a couple of hours.
