    First Pork Belly!


    Good evening all!
    A couple of weeks ago picked up a large pork belly from Costco, started prep Wednesday for today.
    Dry brined it and used Meathead's Memphis rub (minus the garlic since the wife is allergic).
    Right about 3hrs in the Weber Kettle with SnS, Apple and Hickory chunks. Turned out great!

            • We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).

              Looks perfect, Costco in Canada doesn't have bellies....waaaaaaaaaa. Harder to find uncured bellies around here.

                @Souixfan, Great looking Bacon! I remember as a little kid the salt cured bacon and hams hanging in the basement of the old farm house! There was no Smoke House? They may have taken them elsewhere to be Smoked! Dan
