So, I put the bag together with lemon brine, apricot preserves and butter. mixed it all together, massaged the meat, filled the tank with hot tap water (at 120 degrees) set the sous vide and came in here to gossip with you guys.
Meanwhile, HWMO cut the taters and put them on to boil. after an hour, he asks if I want to sear first or do potatoes first. I go to grab the meat. The temp is at 113 degrees. Yeah, I forgot to turn the Sous Vide ON.
Funny how that is a really important step....
oh well. Dinner in 40 more minutes.....
