    Thanks, Pit Boss . I've done Pastrami twice and really like bringing it to 180+ before wrapping at taking it alll the way to 203. I know Meathead says we can take it to 165 for safety reasons and then reheat in 24 hours over steam, but I like having that bark nice and firm. I looked at it at 165 and didn't feel that good about how firm the bark might be upon reheating. To each her own, I guess, in this case. I'll report back.

    Awesome. One thing I'll add for pastrami. I recommend you cook it past 150F when smoking. Smoke it until you get the bark the way you want it.
