Some asked today what I would charge to smoke pork shoulder if they supplied the meat. Any body ever done this for others before? I was thinking there is bag of charcoal , Meatheads Memphis dust, foil, and foil pan for finished meat, and time.
As I like to do this I thought smoke the shoulder, put in foil pan, and give a small shaker of Memphis Dust to use when they serve it. For extra $$ I could also shred it and vacuum seal in 1# packages for freezing.
But what to charge for the smoke. One said his daughter used to have someone smoke meat for them for about $50. With charcoal and supplies I think it would be around $10-15. Any thoughts?
