    Smoke your pork for you.

    Some asked today what I would charge to smoke pork shoulder if they supplied the meat. Any body ever done this for others before? I was thinking there is bag of charcoal , Meatheads Memphis dust, foil, and foil pan for finished meat, and time.

    As I like to do this I thought smoke the shoulder, put in foil pan, and give a small shaker of Memphis Dust to use when they serve it. For extra $$ I could also shred it and vacuum seal in 1# packages for freezing.

    But what to charge for the smoke. One said his daughter used to have someone smoke meat for them for about $50. With charcoal and supplies I think it would be around $10-15. Any thoughts?

    If I can get three butts to do at the same time I will charge $10-15 per butt. Usually they over pay cause they likey so much.

    I charge $25/brisket, with discounts if more than 2.

    But I very rarely just cook one of anything. I got asked recently, but they just needed one. Told them it would be a while.

      When I get my charcoal on sale and pork shoulder by the case, using the PBC I have measured everything and come up to $3.50 per finished pound. This assumes a 50% loss from raw weight. This does not include my time and I don't use a foil pan. It gets cheaper if you can do more at once since coal is a larger expense.
      Checking a local company they have bulk meat takeout at $12.95 a pound for pulled. If I get 4 pounds then my cost for all of it was $14, which would be $52 from the restaurant, assuming their costs are at least as good as mine for meat then they charge $38 per butt to cook. I think $15 is an excellent deal for them and it makes you a little cash.

        My best buddy does this in his spare time, he gets $10/lb for pulled pork, vac-sealed in 1# bags. But it's a hobby for him, something he does on his days off between cleaning house, running errands and doing laundry.

        If you're going to do it on-demand, I'd say $50 to smoke, pull and pack a butt would be pretty cheap, you definitely wouldn't want to be doing too many at that price unless you could mix them in with other orders.

            Hmmm... I do this for friends and family. My deal for them is they buy the meat and a 40 pound bag of lump coal.

            Of course since its friends and family I get to consume the finished product and the fine libations that go with it and they supply the sides.

            Needless to say... I don't often have to buy lump coal.😎

            I pretty much just like the FREE food and good wine... Plus I like listening to people ooh and ahhh about how good the food is.

            My best deal was my daughter in-laws friend asked me if I would bake her 8 Brioche hamburger buns for a cookout she was going to have for a few of her friends. I said sure no problem. When she came to pick them up she gave me a $90 bottle of wine.🙈 I felt guilty for taking it but it went nicely with my ribeye dinner I had that night.
