        Spathcocked a chicken this AM. oiled it and put some Montreal chicken stuff (people give me stuff so I use it) under the skin and then all over the xterior and am cooking it on the Yoder. Making a variation on a green chile smoked chicken chili adn green hatch chile cornbread...explaining why all the corn and all the peppers yesterday.


        By the way... I bought some Hatch chile jalapeno raspberry jam and put that (thinly) on the bottom bun..then very thin onion and tomato slices, the burger with cheese and a healthy dose of the green salsa. It makes for a fine burger.

          If any of you are lucky enough to get to Hatch for the chile fest, try to make it to Sparky's Burgers--good Q, burgers (green chile of course) and more. Well worth the time.

            I live in Monmouth County, NJ, and the Wegmans in Asbury Park has a Hatch Chile cookoff through Sunday. I have read about these peppers for years, but never had them anyway but canned. They charge $40/case, which is at least 20lbs, and they roast it for you. I have only ever been able to get these canned before, so if you are in the NY tri-state area and have always just read about these before, it's the first time I have had the opportunity to buy these fresh and roasted to order. From what I understand, the best comparison is to Vidalia onions. Plant them anywhere else and they are regular onions, but the soil makes all the difference. If you have a chance to get them, they are worth the trouble

              Look for Beuno brand frozen chile--both red or green. I'm thinking most supermarkets will carry it--all of 'em in the great SW do. It comes in round plastic tubs like sour cream. Frozen>>>>>>>>>>>>>>canned.

              IMO, "Hatch" is mostly a marketing gimmick. They do grow tons of chile and the climate is right. Chiles from my garden, tho, taste just as good. I "know" a fellow (he probably doesn't know me) who grows the chile seed for many Hatch growers and he raises the seed plants in AZ.

              My wife and I went to the festival this year (last weekend) and had a good time; even learned how to make a ristra, plus we each got some nifty chile sox.
