I finally got around to assembling and burning in my new smoker. Impressive materials and manufacturing make this a very solid unit.
I did the recommended burn-in and then set the unit to 225°F. It didn't take very long to stabilize so I though I would throw a ThermoWorks air probe on the grate for comparison.
Can't wait for the inaugural port butt on Satuday.
I wonder if Weber is still recommending a drip pan under the cooking grate and on top of the flavorizer bars for this newest version of the Smoke Fire, like they were after they got the "Weber Grease Fire" moniker a couple of years ago...
This still seems like the best pellet cooker for grilling. Can't wait to see how it does for smoking!

STEbbq the other thing that occurs to me, knowing that the Smoke Fire design is based on the Genesis gas grills that I've used for decades, is that since there is no deflector, you really NEED a drip pan under the grate while smoking low and slow, to ensure that the heat is indirect...
