    7lbs Boneless Butt On GMG

    Trying something different this Morning, so I figured I’d Share this cook. Oh, and Happy New Year everyone!

    My Grill Probe Seems pretty Accurate , Weather App said it’s 9 degrees.

    Yuck, Winter is Back. It was 50 degrees on Tuesday in Phoenix, Ny. I was traveling to Pittsburgh on Monday and went From Rain to Freezing Rain/ Black Ice to Fall like weather 50-60 Monday & Tuesday.

    I am am going to cook at 275 to try and save some time. I will probably wrap it @160 and bring it inside. Does anyone think I can get it through the stall without wrapping it, and still shorten the cook? I want it done around 5pm, so I can make some Appetizers for a get together later. If so I would leave it on the GMG.

      I like to run through the stall, wrap (foil pan / juice) and into oven or finish outside if fire is still going ok. Once inside you can crank it up if needed.

        @Hawker, I usually bring it inside in the Winter too. FYI, Pellet Pooper = Pellet Oven.Once it takes the Smoke and forms the Bark it’s pretty much the same.

      11am Update 5 Hours in Internal Temp is 160, Bark Looks Good But it is a bit Soft. I think I am gonna let it ride for awhile. Thermoworks Smoke says my pit temp is 310ish.

          Thanks RonB, it is in the oven Resting, and it smells Delicious. I let it ride Unwrapped. Took 8 hrs.

        The Final Results were Ok, my Opinion is Low and Slow has better results. This cook was 8hrs without wrapping, the Bark was a bit hard next time I will wrap it, and it was a bit dry. It Fed 12 People and I was the only one to complain.
