Learning my Rec Tec and looking for some guidance on the best smoking tube to add flavor on my wing cooks. My goal is to get them smokey and crispy without having to transfer the wings to the gasser. Thanks as always.

SOUS VIDE
INDOOR COOKWARE
I've got both the tube and the tray. They both seem to work about the same for me. I will warn you; however, in my pellet cooker at temps you need to cook chicken at, say 350* to get that crispy skin, the combustion gasses and air flow make it hard for the tube to stay lit. I guess the oxygen is all consumed by the burn pot. You may not have this experience but it's something I've found to be true. Low temps, it's much easy to do. Good luck either way.

Other useful bits...
KitchenAid 7-qt Pro Line stand mixer
A Black & Decker food processor that I can't seem to murder
A couple of immersion blenders, one a "consumer" model & the other a "high end" Italian thing. Yes, the Italian one is a bit better, but only marginally
Instant Pot Duo Evo Plus 8-qt + accessories like egg-bite & egg holders
All-Clad pots & pans, along with some cast iron...everything from 7" Skookie pans to 8.5qt Dutch ovens
Weber GBS griddle, pizza stone, and wok
Knives range from Mercer to F. Dick to "You spent how much for one knife? One knife?!" LOL
I think you’ll be fine with either the tube or non-tube type. I have both but seem to use the tube more...it’s just easier to move when lit. I light it standing up, like a big candle...and once it gets ripping I can blow out the flames and lay it in my fathers Traeger. The amount of real estate available also factors into that.
