Been wanting to get a good tri-tip and cook her until probe tender. Sweet pics!

Nice ring! For some reason my wife doesn't like tri-tip. If done right, I find it to be very tender and tasty. I really like it.

I love Tri-Tip. Never smoked it only reverse seared and sliced. That looks great.

Nice! Fun to make a Tri Tip like that once in awhile. Great post.

              PBR good.
I cook tri-tip on a pellet grill, reverse sear on grill grates.

Looks good but out of curiosity why did you cut a hunk off the top?

Ha. That’s actually the slice from the end and I just placed it on top.

Never tried tri-tips cooked like a brisket. I've only cooked them to 130 degF then seared them. By brisket style I assume you smoked it at a low temp until probe tender. What temp did it end up at?

I smoked it at 225 til 165. Then wrapped it in butcher paper to 195 and then let it go the last 5 degrees unwrapped to 200. Pulled it and rested it for 45 minutes and dove in.
