    I'm actually pretty new to hatch chilies. So I'm not sure but when my girlfriend went to the tienda they sold her some orange ones and told her orange meant they were hotter. The weird thing was they weren't long the were short. So when I bought the peppers above I picked through and bought the orange ones.

    I've always sorted through the Hatch chili piles and set aside the ones that were not green. Is there any difference in flavor between those and the ones that have begun to change color?

    Yeah, it kind of looked like a mess in there but really the skins had just come off. Perfect

    I use my roto more for nuts than anything else.

    helps a lot with small things that you would have to stir/rotate often. I used to have to burn 5% to get the rest done. The roto makes it easy.

    Wow! So they separated on their own? I had been coming to the conclusion that in the future I'll just shell out the big bucks to peppers already roasted, peeled and frozen. I find the peeling step really slow on the ones I've roasted and frozen. This might change the equation, but I don't really have a cooker that could work with a rotisserie.

    Well, it worked out better than I expected. The skins separated from the flesh in the basket and did not have to completely blacken. I had about 11 peppers and decided only half would fit but I think I could have done them all after seeing how it all worked.

    When they looked done I dumped the basket on my cutting board.

    Cleanup wasn't too bad either. The halves of the basket separate and it's dishwasher safe but I easily cleaned them up by hand.

    So far I'm seeing that roasting on the grate is faster. The peppers are now soft but not yet blackened. I'm worried they will get too mushy before the skin is blackened. Hopefully, it works out and they're done soon as I have a flight to catch.
