Im looking to do similar and welcome responses. I'm trying to decide between the Su-VGun, Culinary Torch or a griddle (Blackstone) method. What gives the best, fastest and easiest sear. I currently have a Weber Grill NG (Sumit and a Spirit) and its sear capabilities are poor in comparison. I did just buy a gridle top for it and will experiment with this too.
I thought about getting a torch set up but went with a small Blackstone griddle because of the versatility mentioned above. I smoke the steaks or chops in my pellet cooker first, then rest them while the griddle heats up, then sear to our desired temp. Works perfectly. Plus I can do so much more with it.
I took a look at this as well. I felt it was really hard to justify the expense for a torch which delivered very inconsistent results that required a lot of practice to get dialed in versus a much more flexible griddle.
