    Ribs on the Yoder Wichita

    Since the Stickburner (Logs) channel doesn't get much love I thought I'd repost my rib cook yesterday here...

    3 large racks of St Louis ribs for tonight. Huskee's Rib Rub recipe.

    Each rack after trimming weighed in about 3.5 - 3.7lbs. I expect these to take ~9hrs.

    Here they are at about 4hrs. The brown sugar topper that I use looks a little unsightly here, but it will pretty up as the bark develops. Oak & ash logs on the Yoder.

          Looks good, Huskee! The snowline is creeping down the mountains toward us here in Colorado. Pretty soon, my lawn will look like yours.

            Thanks! I sometimes forget there are folks who have worse and earlier winters than us here in MI, like you, Spinaker and Danjohnston949 to name a couple. This was such a nice summer for us I'm just not in the mood for cold yet.

            I'm curious, why do they take 9 hrs? When I cook them at that temp they take a little less than 6 hrs.

              Quite often the only ribs I can find around here are big, 3.5 - 3.75lbs per rack. Even though I trim them, they still want to take an avg of 7 hrs, sometimes up to 9. These went 9.5, and as I recall I could've pulled them anywhere from 30-60 mins sooner, but it was all good.

                Ok that makes sense. I haven't been weighing my ribs but the last ones seemed small and were done in 4.5 hrs. Guess I need to start tracking that. Thanks!
