    Burnout: FIRE n SMOKE!!!!!

    Okay, yall, I might not git alla these posted before beddy-bye time, but I'll git started...

    Rolled her from th driveway to my entry walk, to git out of th direct sunshine, on this very humid, 95° day...

    Rounded up some various small chunks of smoker wood, to appease all th Smoker Deities, an welcome th Full Moon, as well!

    Fer starters, I grabbed some Mesquite, Oak, Apple, an a partly burned larger split of Hickory...

            I may do one more test burn, to learn how to hold it 225° 250° 275°, but that does not preclude th possibility of throwin some food on there!

          My burn started with all vents opened 6 turns, per mfr's instructions...when temps reached 375°, which didn't take long, I dialed vents down to 2 turns open. This brought temps down to 275° in a short time, so I opened vents back up to 4 turns, an adjusted damper to reach n hold 350°.

          By playin with th vents, an damper last night, was able to run her up from 350° to 400°, an hold. I then dialed down to 375°, then 325°. After that, I dialed her back up to 350°, manufacturer's burn-in recommendation, an went to bed.

          When I went out at 0600 this mornin, th cookin chamber was down to 150°, an there were a scant few glowin coals left, after 9.5 hours, set to run at 350°.

          I'm sure I could easily have gotten 8+ hours holdin that temp, before I had to add fuel, and would have to speculate even longer cook times, dialed down to 225°-250°-275°, especially doin a Minion method fire.

          I took these pics at 0815, fire completely dead.

          It appears to me that th cooker burned th charcoal very efficiently, as I see no charcoal remnants, despite th big ol honkin size expanded metal that th fire grate is made from. There are a few small charred wood remnants, but everything else appears to be very fine ash.

          I'll do further forensic examination, when I dump out th ash pan...

          I might mention that when I started this burn, an all night long, there were steady, continuous winds from 15-25 mph, with frequent gusts of 35mph, not always th easiest conditions to hold steady temps.

          That didn't seem to bother Th Good One...
