    Quite large event Friday night

    Confirmed.. Going to be head pitmaster cooking for 3000 people in the center of Palermo BsAs, a few hundred meters from the American embassy. For this I bring out the big guns, the whole naval fleet of 3 trailers.

    Alright, so just how many cookers are there on that fleet of trailers?

      "Texas" is a 1000 gallon offset with 3 racks in each door and an additional 250 gallon pit mounted above the firebox.1250 gallons total.

      "Bambi" es our new baby for the BBQ school. 250 gallon reverse flow with hotplate on top of firebox. Right side has a reverse flow pit 1.2 meters long, brasero in the middle for burning coals or wood, then a parrilla on the front 1 meter long.

            I assume there are pics but they are not showing up on my iPhone. Same with some other posts. Anyone have an idea why. I know there is somewhere else to ask this. I’ll have to look for it later.

                Most of us can produce outstanding food for our families and neighbors, but the task of doing so for the equivalent of a town is mind blowing. I would wish you good luck but you don’t need it as you have the experience and skills to pull this off without a problem. Would love to hear about the logistics involved once you finish and get some rest.

                      There is space in the lance of all 3 trailers for wood. Surprisingly the other day I only used 80kg of wood for the entire cook using Texas. It was 30C outside though.
