        Here’s my thoughts.

        I have cooked hundreds and hundreds of racks of ribs. All types of cookers, rubs and fuels. This cook was Smithfield Extra tender. Right out of the package. I didn’t even pull the membrain off. I figured I’d blow the cook so there was no need.

        This was the best rack of ribs I’ve ever made!

        Sweetest smoke ever. I mean sugar sweet. Crispie bite. Amazing mouth feel. Just amazing.

        Honestly I figured this cook to be a loss.

              They took about a pint of Bourbon start to finish.; )

              Honestly I really dont know. I just kinda got lost in it. My guess is I lit the fire around 5:30p and pulled ribs about 10:30p? I dont know when I actually put the ribs in the asador.

                      What a great day you had. I’m a Mallman fan so I knew what it was but Hell if I’d have any clue about actually getting it done. This was a great read start to finish. I think this style epitomizes everything we love about outdoor cooking. I can not wait to see more cooks on it.

                      How interesting that that was the best smoke flavor you’ve had and yet, no sign of the fabled smoke ring. Maybe we’re all doing this wrong. Also it didn’t really take you too much more time to cook them. By the way, did you go through a lot of wood? Is that what Ahumadora meant about a chain saw?

                        I think the chainsaw reference was to the tool needed to spatchcock a cow : ). Wood? Maybe 15 splits? I didn’t think much about it. I’m doing a rack again right now. I’ll try and keep better track. JCBBQ.
