70monte It’s a running joke we started with last years Secret Santa. I posted a picture of some paper plates and said I was gonna give those as a gift to whoever’s name I was given. So it kinda evolved over the months to where I have my own line of plates called PJ’s Paper Plates. I really don’t have a line of plates. 😂

To be honest, I really didn't have any real expectations about how the cook would go. I had read many posts on here and other websites about cooking with wood on this grill so I already had a plan. Most everyone had said to use smaller splits, leave all vents open, and control cooker temp with split size. That worked pretty good for the most part but I did have a couple of occasions where I had trouble starting the new splits maybe because my coal bed wasn't as big as it should have been.
