    Memphis, TN

    I go to two places, primarily.
    1. Charlie’s Meat Market on Summer in Memphis near where I work
    2. Thomas’ Meat Market in Collierville near where I live
    Who knows of other good spots? Neither of these carry smaller shoulders. Can’t find anything under 10lb.

    I cut mine in half anyway to get more bark. Cut, cook one, freeze one.

      I do the same, I rarely cook any butts over 4lbs, maybe 5. I've cooked lots at 3lbs. The end result is so much more flavorful.

      Huskee showed me the way. I now do as he does. Faster cooks, more bark. What's not to like?

      HawkerXP Dewesq55 I was nervous the first time I had a 6.5lber and split it, I thought surely a couple ~3lb hunks would be dry turds when done. Nope, worked wonderfully. Of course, I wrap in foil after the stall, can't comment on how an unwrapped 3lber would turn out might not be worth it.

        jdgraffam We're taking it one day at a time. We're hopeful this will blow over by then, we have 4+ months. We will update everyone both here and via email for those who've registered if anything changes.

      HawkerXP Is there a special way to cut this thing? Up, down, left, right? What about th’bone? It’s 10lb easy.

        I leave the bone in, just try to cut in into as equal chunks as you can.
