Aw man, Wagyu is easier. It gets done quicker from all the soft fatty goodness. Dry brine for 24 hrs, add a dash of BBBR, smoke at 225 with a little oak or pecan (or both) for about 3-4 hrs, wrap once it hits 150ish, take to 190 (Wagyu doesn't need 203), hold in a cambro for 2hrs or until dinner. Drool, slice, chew, repeat.
Tempting! Their meat is great. I've ordered from them before. They usually give you a pound or two more than you'd expect as well, which is always welcome.
