I got a slab of heartbrand beef plate from Fresh by Brookshires, and it made wonderful beef bacon. I just checked and heartbrand doesn't list it on their website. Maybe contact them and see.

Will do. I am still on the fence about it. I might either do the bacon recipe for it or make it into pastrami, since that is what Kattz's claims they use for their 'strami. Eric2662

Spinaker I honestly can't remember the thickness of it. I want to say I purchased either the 5-7lb or 7-9lb. I tried making beef bacon with it too though. It came out good and everybody enjoyed it, but I personally don't have plans on doing it again. Nothing beats bacon from a pig. If you end up doing it, post about it. I'd love to see how it worked out for you.
