I have been grilling for 15 years but have just started smoking. I don't know very much but I am trying to learn everything I can. This is turning into a fun hobby that works well with my other hobby, homebrewing beer.

Spices: Lots of 'em.
Thanks all, I will be needed a whole bunch of smoking advice. So I will be happy to give out any beer or brewing advice. I teach brewing at our local Air Force base.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
