    Oh, don't get up, it's just me

    Greetings, all. My name is Bill Fleet, and I am happy to have joined you.

    I have been rifling through the recipe sections here for some time, starting with Meathead's bacon recipe some years ago, and have just done the double-smoked Ham with Apricot Glaze this past weekend. I finally decided to elevate my status from food-porn 'lurker' to full-fledged member, and here we are.

    I have only the one basic grill, a Weber One-Touch Silver from 2008, but I have been delightedly hacking it for the last 11 years. I finally replaced its sweeper vents this Christmas, and then fell into an upgrade spiral that has not yet abated. I do have a limit, though: I don't like to get anything that costs more than the grill did itself: $90.

    I currently live a mile down a quiet country road within metropolitan Charlotte, NC, with my wife and the remains of our children. The last two are in their Senior years at college and high school, respectively, and the other three are off on their own, here in Charlotte, in New Hampshire and New Jersey. My wife and I hail originally from north New Jersey, but we have lived in Columbia, SC and Evansville, IN along the way. We passed our 25th anniversary last summer in lockdown.

    I currently work for Lowe's Digital as a Software Engineer. I am the one who dives into the new cooking technologies like Sous Vide and Instant Pots, and also grilling. So I get to play with making (mostly) delicious food, mostly outside. Although Karin has finally figured out the Instant Pot, and no longer sees it as dangerous.

    BBQ Dragon Grill Stone (still figuring this one out)

    Craftsman 12.5-Amp Heat Gun (for searing)
    Instant Pot DUO 8 qt.
    Instant Pot DUO 6 qt. (Don't tell Karin I have this one, but it was $25 after coupons and a gift card)
    ~70-year-old set of cast iron skillets (they were a wedding gift to my Mom)
    Sun Joe Wood Chipper (turns prunings from my apple, cherry, and pear trees into mulch and smoking chips)

    I didn’t get up for you Bill, but I did have to roll over on the couch to get my iPad. Great introduction, so I guess my efforts to do minimal body movements was worth it. Welcome to The Pit! You’ll have fun here, lots of great folks. Looking forward to seeing some of your cooks.

                Yeah, my lovely wife at Christmas gifted me with a smoker tube, a rib rack, and a copy Raichlen's The Brisket Book. I said to her, "You know, of course, that you have just opened Pandora's Box, and cannot close it again." I should add that the Box in mention is apparently filled with smoked meats.
