Welcome from TN. Take a look at the brisket recipe on the free side and if you can, make the Texas BBQ Juice. I make that even when I am just doing chuck roasts. And don't let the cold stop you!!! We are any kind of weather peoples lol

01dD0g2, I grew up in Detroit, but I have been here for almost 30 years. It is a great place, but we don't have the great Q restaurants you guys have in Texas

Start with a Boston Butt. Easy to get some success there and feel good about your skills. Then do some ribs. Smoke some chickens (higher heat but still a great skill to get mist chicken and crispy skin) . Then once you have mastered 2 zone low and slow and have some more confidence march on to that brisket. It will save you time and $ in the long run.

              Welcome aboard

I sense that you are a little closer to Dallas, because someone in Ft.Worth would never identify as dfw area. 😀 Regardless, welcome to the Pit!
