Welcome to the pit from the bbq capital of New England, Massachusetts. I did a chuck a couple of weeks ago that took much longer than I expected. I wanted to pull it off at 190* for slices but it went over so I left it until 205* and pulled it. A mistake that turned out pretty good even though it wasn't what I had planned.
