The best bang for the buck under $500 is the Weber kettle. There are lots of different models and sizes, but that’s where I’d start. I have a Big Green Egg, and I still do about half my cooking on the kettle.

Cocktails: Alton Brown turned me onto boulevardiers. That has become my travel cocktail. At home it is usually spiced rum, vodka, or whisky mixed with ginger ale.
Planning on a DIY smoker. **Those plans got scrapped. Between the PBC and the SnS, a DIY smoker project has moved way down the list. Now I want to build an Argentinian style grill!
Former homebrewer with plans on returning to it when location and time allows.
No restrictions with me (love meats, cheese, veggies, etc...) however a friend I often cook with has celiac so I avoid gluten in my cooking. (PS. Stone delicious is a gluten reduced beer that he highly recommends )
Welcome from up the road in the Harrisburg area. When I joined up I couldn't decide what smoker or even what type of smoker I wanted. And I too didn't want to spend more than $500. I took the consensus advice from the Pit family and went with the Pit Barrel Cooker. I'm still super happy with that decision. I love the versatility and a basket of coals runs a long time! And I'll cook anything in it. Traditional stuff like ribs, pork butt, sausages, chicken (whole or thighs) but I have also done fish, meatloaf, stuffed cabbage, and even a ratatouille! I have eventually added a 22" weber kettle with a slow and sear setup and have used that for smoking too. (If the Slow and Sear brand kettle existed when I got the weber kettle, I may have gone with that instead.)
