Thanks Guys for the welcome notes. My first cook went well ... Was able to hold the temp to steady a few degrees either side of 225F. The chicken came out great ... pulled w/homemade BBQ sauce. The trout cooked too fast and didn't get enough smoke. Also the brine needed more salt. Live and learn!

Hi Guys -
Happy Father's Day to all the Dads!
My daughter treated me to a membership here today ... how cool is that?!?!
We have been remodeling the backyard so I'm building a BBQ island with a 36" Lynx grill and a KAT 36" reverse flow smoker. Will post pics when its all done.
I took delivery of the smoker a couple weeks ago and after a couple seasoning burns, today is my first cook and I'm smoking chicken and trout.
Looking forward to learning and sharing here.
